HOW ITS MADE: The alcohol is extracted using spinning cone technology in a low-temperature, vacuum environment. Initially, the flavor is removed and set aside, followed by the removal of alcohol. Once this is complete, the flavor is reintroduced into the de-alcoholized wine. Due to the processing, there is a noticeable decrease in volume, so a portion of the alcohol water is put through the same process to extract the water, which is then added back to the wine. This method enhances the palate and maintains a balanced acidity. Traditional winemaking techniques are then followed to prepare the wine for bottling.
